The hunt for the perfect sugar

Sugar is now the No. 1 substance consumers are trying to cut or eliminate from their diets. And public health officials have started to tax sugary drinks and requiring companies to reveal the amount of added sugars on product packaging. At the same time, an increasing number of researchers have begun linking sugar alternatives like sweeteners to such dreaded conditions as heart disease, Alzheimer’s, and cancer.

But the search for ‘perfect sugar’ – a no-calorie sweetener that tastes and feels as good as the stuff extracted from pure cane and is ‘seemingly natural’ – is proving to be increasingly elusive.
